Well, Jason has been busy with work and hasn't had time (or energy) to mess with the computer so another blog without a picture. He should be thankful I have access because I would really be hounding him:) Anyway, I did a little e-mail recipe swap a few weeks ago and actually ended up with some good and easy recipes that I have tried and thought I would share them. The first 3 I tried and will definitely do again. The Apalachicola Apple Cake is actually from an old cookbook from my home town that my mom shared with me. So see if you are interested in any of them and let me know how they turn out.
Country Grits and Sausage
2 c. water
1/2 tsp salt
1/2 c. uncooked grits
4 c.(16 oz) Shredded extra sharp cheddar cheese
4 eggs beaten
1 c. milk
1/2 tsp. thyme
1/8 tsp. garlic salt
2 lbs. mild sausage, cooked, crumbled and drained
Bring water and salt to boil. Stir in grits. Return to boil. Reduce heat. Cook 4 minutes, stirring occasionally. Combine grits and cheese in large mixing bowl. Stir until cheese is melted. Combine eggs, milk, thyme, and garlic salt. Mix well. Add a small amount of hot grits mixture to egg mixture, stirring well. Stir egg mixture into remaining grits mixture. Add cooked sausage, stirring well. Pour into a 12 x 8 x 2 in baking dish. Cover and refrigerate overnight. Remove from fridge; let stand for 15 min. Bake at 350 for 50-55 minutes. Yield 8 servings.
(I halfed this recipe and it made enough for jason and I for dinner and I had pancakes for the boys and it was breakfast night....I also only made it up at nap time and put it in the fridge for a few hours and that was fine too. I thought it was really good. Oh yeah and I used whatever cheese I had, I think mozz. and another blend)
Bacon Fried Rice
Put a package of bacon in the freezer for about 10 minutes. This helps keep it all together for slicing. Slice the bacon crosswise into thin strips. Brown the bacon in a really big skillet or wok, separating all the little pieces as it cooks. Meanwhile, steam rice and matchstick carrots together. I use a mix of white and brown instant rice. Steaming the carrots with the rice gives it flavor and softens the carrots. When bacon is done, drain it on paper towels and wipe the pan lightly. Leave some grease for scrambling some eggs and frying the rice while the bacon drains. You should scramble the eggs into really small pieces. Add the rice and carrots, then the bacon. Fry it all up in the pan with however much or little soy sauce you desire. Adjust the amounts of the ingredients to your preference as well. For my family of 4, I use 1 lb of bacon, about 1 1/2 cups of rice per person, 1/2 cup of matchstick carrots total, and 1 egg per person.
(This was also very good and Jason liked it too....I just made the 4 serving of rice...not instant and it was enough for us but the boys didn't eat much at all. I was a little skeptical of the bacon but it wasn't too strong. However, I did use Turkey bacon. You could also do this with chicken and It would probably be good and add some extra veggies)
APALACHICOLA APPLE CAKE
3 C all purpose flour
3 C apple, peeled and cut in pieces
2 C pecans, broken into pieces
1 tsp cinnamon
1 tsp baking soda
1 tsp salt
Mix first 6 ingredients in large bowl.
2 C sugar
2 eggs
1 1/2 C wesson oil
Mix next 3 ingredients in separate bowl and beat until smooth, then add to first mixture.
Spray 9x13 pan with Pam and pour in mixture, Bake at 300 degrees for 1 hr and 20 min
(I halfed this and sent it to Jason's work and it was a big hit....I had already made a full recipe for us and some neighbors. I liked it better after it had cooled)
I haven't tried the next few recipes but they sounded good.
Buffalo Chicken Dip
2-3 chicken breast, boiled and shredded
1 cup of wing sauce
1 jar of bleu cheese dressing
12 oz whipped cream cheese
Marinate chicken in wing sauce (20 minutes to overnight- the longer you
marinate, the stronger the flavor) Mix cream cheese and 1/2 jar of dressing;
spread in bottom of pan and cover with remaining dressing.
Add marinated chicken on top. Bake at 375 for 30 minutes (until hot all the
way through)
Serve with Fritos Scoops. DELISH!
APPLE CRUNCH
5 Large apples
1 C sugar
1 C flour
1 stick butter
1 tsp cinnamon
Peel apples and slice the size of large french fries. Put in bottom of large glass dish. Using a medium mixing bowl, mix flour and sugar and cinnamon together real good. Add margarine, Take this mixture and sprinkle over apples.
NOTE: add 1/2 cup water and sprinkle a little sugar over apples before adding mixture over apples.
Bake at 350 degrees 45-60 min or until done
APPLE UP-SIDE DOWN CAKE
1/3 c butter and 1/3 c brown sugar
6 small apples(stems removed and cored)
1 1/2 c all purpose flour
2/3 c sugar
2 tsp baking powder
1/2 tsp ginger
1 tsp cinnamon
1 c milk
1/4 c butter
1 egg
1 tsp vanilla
Preheat oven to 350 degrees. place butter in round cake pan or cast iron skillet and place in oven until butter melts.Sprinkle brown sugar over butter and stir. Bake in oven 10-15 min until bubbly.
Peel apples. Thinly slice 1-2 apples and place in pan containing butter and brown sugar. (arrange slices in pretty pattern) Shred rest of apples. In bowl, combine flour, sugar,baking powder, ginger and cinnamon. Add apples, milk, 1/4 c butter, egg and vanila. Spoon over apples. Bake 35 min cool in pan for 20 min Serve over ice cream
